Dr Sabine Ernsting is a graduate of the University of Cape Town, South Africa, where she completed her pathology training, specialising in medical microbiology, in 2000. In 2002, she moved to Townsville in Far North Queensland, where she worked in intensive care and anaesthetics while waiting for assessment of her qualifications by the Royal College of Pathologists of Australasia (RCPA).

In 2004, Dr Ernsting moved to Adelaide and commenced training in anatomical pathology. She developed an interest in gastrointestinal and hepatobiliary pathology and concentrated on liver transplant pathology.

In 2010, Dr Ernsting joined Clinpath Laboratories, where her primary field of interest remains gastrointestinal and hepatobiliary pathology. From June 2012 to December 2015, Dr Ernsting also worked at BreastScreen SA in the Assessment Clinic, which uses fine needle biopsy techniques for the evaluation of breast lesions. She is a member of the Australian Society of Cytology.

In 2015, Dr Ernsting became a founding member of the Australasian Gastrointestinal Pathology Society, a not-for-profit organisation of specialist pathologists with an interest in gastrointestinal (GIT) pathology. The goal of the Society is to encourage and facilitate diagnostic expertise, teaching, education and research in GIT pathology in the Australasia region.
